Pljeskavica is a traditional dish popular in the Balkans, primarily Serbia, Bosnia and Herzegovina, Croatia, and Montenegro. It is a patty made from a mix of ground meats, such as pork, beef, and lamb, and sometimes includes onions and spices. The dish is typically grilled and served with flatbread, often with a side of onions, kajmak (dairy product), ajvar (relish), and urnebes (spicy cheese salad). Its name derives from 'pljesak', a word meaning 'to clap the hands', reflecting the action of patting the meat mixture into a flat round shape.

Recipe

Ingredients:

  • 500g ground beef

  • 200g ground pork

  • 200g ground lamb

  • 1 onion, finely chopped

  • 3 cloves of garlic, minced

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 1 teaspoon paprika

  • 1 teaspoon cayenne pepper

  • 1 egg

  • 2 tablespoons vegetable oil


Instructions:

  1. In a large bowl, combine the ground beef, ground pork, ground lamb, chopped onion, minced garlic, salt, black pepper, paprika, cayenne pepper, and egg. Mix well until all the ingredients are evenly distributed.

  2. Divide the meat mixture into equal portions and shape each portion into a thick patty.

  3. Heat the vegetable oil in a large frying pan over medium-high heat.

  4. Add the patties to the pan and cook for about 5 minutes on each side, or until they are well browned and cooked through.

  5. Remove the patties from the pan and drain them on paper towels.

  6. Serve the pljeskavica hot, with your choice of bread and condiments.
