Next Dish: Rock Lobster
Pite is a traditional Balkan dish, particularly popular in Albania, Kosovo, and North Macedonia. It's a layered pastry food made of thin flaky dough known as phyllo (or jufka), typically filled with cheese, meat, spinach, or potatoes. The dish can be rolled or stacked with layers of dough separated by the filling then baked. Pite is often served as a main course and is a staple in Balkan cuisine.
Recipe
Ingredients:
500g flour
1 tsp salt
200ml water
200ml oil
500g mixed cheese (feta, ricotta)
3 eggs
50g melted butter
Instructions:
Begin by combining the flour and salt in a large bowl.
Gradually add water, stirring continuously to form a dough.
Knead the dough for about 10 minutes until it becomes smooth and elastic.
Divide the dough into 4 equal parts, shape them into balls and let them rest for 30 minutes.
In the meantime, prepare the filling by mixing the cheese and eggs together in a separate bowl.
Preheat your oven to 180°C (350°F) and grease a baking dish.
Roll out each ball of dough as thin as possible, then brush each with oil.
Spread the cheese mixture evenly over the dough, then roll it up tightly like a jelly roll.
Arrange the rolls in the greased baking dish, starting from the outer edge and working towards the center.
Brush the top with melted butter and bake for about 45 minutes, or until golden brown.
Let it cool for a few minutes before serving. Enjoy your homemade Pite!
