Piragi is a traditional Latvian dish, often served during special occasions and holidays, particularly Christmas. Recipe
Ingredients:
2 cups of warm milk
1 tablespoon of sugar
2 packets of active dry yeast
6 cups of all-purpose flour
1 teaspoon of salt
1 cup of melted butter
2 eggs
1 pound of bacon
1 large onion
1 teaspoon of black pepper
Instructions:
In a bowl, dissolve the sugar in the warm milk and sprinkle the yeast over the top. Let it sit for 10 minutes until it becomes frothy.
In a large bowl, mix the flour and salt. Make a well in the center and pour in the yeast mixture, melted butter, and eggs. Mix until dough forms, then knead on a floured surface until smooth and elastic. Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour.
While the dough is rising, prepare the filling. Chop the bacon and onion into small pieces and cook in a skillet over medium heat until the bacon is crispy and the onion is translucent. Season with black pepper and let it cool.
Preheat the oven to 375 degrees F (190 degrees C). Divide the dough into small pieces and roll each piece into a circle. Put a spoonful of the bacon and onion filling in the center of each circle, fold the dough over the filling, and pinch the edges to seal.
Place the filled piragi on a baking sheet and bake in the preheated oven for 15-20 minutes, or until golden brown.
Let the piragi cool for a few minutes before serving. Enjoy them warm.
