Next Dish: Boiled Fish

Pilau, also known as pilaf, is a dish in which rice is cooked in a seasoned broth. The rice may also contain spices, and often has added meat, vegetables, or dried fruits. Originating from the Indian subcontinent, variations of pilau are found in many cuisines including Persian, Turkish, Arab, Armenian, Greek, and East African. The dish is typically served as a main course or side dish.

Recipe

Ingredients:

  • 2 cups of Basmati rice

  • 4 cups of water

  • 2 tablespoons of vegetable oil

  • 1 large onion, finely chopped

  • 2 cloves of garlic, minced

  • 1 tablespoon of Pilau masala

  • 1 teaspoon of turmeric

  • 1 teaspoon of cumin

  • 1 teaspoon of salt

  • 1 pound of beef, cubed

  • 2 carrots, chopped

  • 2 potatoes, chopped

  • 1 green bell pepper, chopped

  • 1 cup of peas


Instructions:

  1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

  2. Heat the vegetable oil in a large pan over medium heat. Add the onion and garlic, and cook until the onion is translucent.

  3. Add the Pilau masala, turmeric, cumin, and salt to the pan. Stir well to combine.

  4. Add the beef to the pan, and cook until it is browned on all sides.

  5. Add the carrots, potatoes, bell pepper, and peas to the pan. Stir well to combine.

  6. Add the drained rice to the pan. Stir well to combine all the ingredients.

  7. Add the water to the pan. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for 20 minutes, or until the rice is cooked and all the water has been absorbed.

  8. Fluff the rice with a fork before serving.
