Piadina is a traditional Italian flatbread from the Romagna region. It is typically made from white flour, lard or olive oil, salt, and water. The dough is typically cooked on a terracotta dish, although modern versions may be cooked on metal griddles. It is often served filled with various ingredients such as cold cuts, cheese, and vegetables.
Recipe
Ingredients:
500 grams of flour
90 grams of lard or olive oil
1 teaspoon of salt
250 ml of warm water
1 teaspoon of baking powder
Instructions:
In a large bowl, combine the flour, salt, and baking powder.
Add the lard or olive oil and start mixing with your hands until the mixture becomes crumbly.
Gradually add the warm water and knead the dough until it's smooth and elastic.
Divide the dough into 8 equal parts and roll each part into a ball.
On a floured surface, roll out each ball into a thin, flat circle.
Heat a large pan over medium heat and cook each piadina for about 2 minutes on each side or until lightly browned.
Fill with your ingredients of choice (such as ham, cheese, or vegetables) and fold in half.
Serve the piadina warm.
