Peas n' Rice is a traditional dish from the Bahamas, often considered the national dish of the country. It consists of pigeon peas and rice cooked together with a variety of seasonings, such as tomatoes, onions, peppers, and bacon. The dish is typically served as a side dish, but can also be enjoyed as a main course. It is commonly enjoyed during celebrations and holidays, particularly Junkanoo, a street parade held on Boxing Day and New Year's Day.

Ingredients:
1 cup long grain white rice
2 cups chicken broth
1 cup frozen peas
1 small onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Heat the olive oil in a large saucepan over medium heat.
Add the diced onion and minced garlic to the pan, sauté until the onion is translucent.
Add the rice to the pan and stir well, ensuring all the grains are coated in the oil.
Pour in the chicken broth and bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes.
After 15 minutes, stir in the frozen peas, cover the pan again, and let it cook for another 5 minutes.
Season with salt and pepper to taste before serving.
