pastizzi

Next Dish: Madrouba

Pastizzi is a traditional Maltese pastry that typically contains either ricotta cheese or mushy peas. It is a popular snack on the Maltese Islands and is also found in Maltese communities abroad. The pastry is made from a dough that is folded multiple times to create a flaky texture, similar to puff pastry. The shape of the pastizzi is typically a diamond or a conical form.

Recipe

Ingredients:

  • 500g puff pastry

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 2 cloves garlic, minced

  • 250g ricotta cheese

  • 1 egg

  • Salt and pepper to taste

  • 1 egg, beaten (for glazing)

Instructions:

  1. Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

  2. Heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant.

  3. In a separate bowl, mix the ricotta cheese, egg, salt, and pepper together until well combined.

  4. Roll out the puff pastry until it's about 1/8-inch thick. Cut out circles using a round cookie cutter or a glass.

  5. Place a spoonful of the ricotta mixture in the center of each pastry circle. Fold the pastry over the filling to create a half-moon shape, and crimp the edges to seal.

  6. Place the pastizzi on the prepared baking tray. Brush the tops of each with the beaten egg to glaze.

  7. Bake in the preheated oven for 15-20 minutes, or until the pastizzi are golden brown and puffed up.

  8. Allow to cool slightly before serving. Enjoy your homemade Maltese pastizzi!
