Pašticada is a traditional Croatian dish popular in Dalmatia. It is a stewed beef dish cooked in a special sauce, often served with gnocchi or homemade pasta. The preparation involves marinating the beef in garlic, cloves, and vinegar overnight, then slow-cooking it with vegetables, prunes, and a mixture of wine and prosecco. The dish is typically served at special events and celebrations.

Recipe

Ingredients:

  • 1.5 kg beef round

  • 4 cloves garlic

  • 2 carrots

  • 1 apple

  • 100 g dried plums

  • 2 onions

  • 2 dl red wine

  • 2 dl Prošek (Dalmatian dessert wine)

  • 1 tablespoon tomato paste

  • 1 tablespoon honey

  • 1 tablespoon vinegar

  • 1 bay leaf

  • 3 cloves

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 dl olive oil


Instructions:

  1. Cut the beef round and insert pieces of garlic, carrots, and dried plums into the cuts. Season it with salt and pepper.

  2. In a large pot, heat the olive oil and sear the beef round on all sides until it gets a nice brown color. Remove the meat from the pot.

  3. In the same pot, add chopped onions, remaining carrots, and apple. Sauté until they become soft.

  4. Return the seared beef to the pot, add red wine, Prošek, tomato paste, honey, vinegar, bay leaf, and cloves. Cover the pot and simmer on low heat for about 2-3 hours, until the meat becomes tender.

  5. Once the meat is cooked, remove it from the pot and blend the sauce until it becomes smooth.

  6. Slice the meat and serve it with the sauce. Pašticada is traditionally served with gnocchi or homemade pasta.
