Next Dish: Vigorón

Pancit is a popular noodle dish in the Philippines. The term is derived from the Hokkien phrase "pian i sit" which means "something conveniently cooked fast". It is often served at celebrations and special occasions as it is believed to symbolize long life and good health. There are numerous variations of Pancit across the different regions of the Philippines, each with unique ingredients and preparation methods.

Recipe

Ingredients:

  • 1 pack of Pancit Bihon noodles

  • 1 chicken breast, boiled and shredded

  • 2 cups of chicken broth (from the boiled chicken)

  • 1 carrot, julienned

  • 1 bell pepper, julienned

  • 1 onion, chopped

  • 4 cloves of garlic, minced

  • 1 cup of cabbage, shredded

  • 2 tablespoons of soy sauce

  • 1/2 cup of sliced green onions

  • 2 tablespoons of cooking oil

  • Salt and pepper to taste

  • 2 lemons, sliced (for serving)


Instructions:

  1. In a large pan, heat the cooking oil over medium heat.

  2. Saute the garlic and onions until they become soft and aromatic.

  3. Add the shredded chicken to the pan and cook for a few minutes.

  4. Add the carrots and bell pepper to the pan and stir-fry for a minute.

  5. Pour the chicken broth into the pan and bring it to a boil.

  6. Once the broth is boiling, add the Pancit Bihon noodles. Make sure all the noodles are submerged in the broth.

  7. Let the noodles cook in the broth until they become soft, stirring occasionally.

  8. Add the soy sauce, salt, and pepper to the pan and mix well.

  9. Add the shredded cabbage and green onions to the pan and cook for another minute.

  10. Once all the ingredients are well combined and the noodles are cooked, remove the pan from the heat.

  11. Serve the Pancit with slices of lemon on the side.
