Okonomiyaki is a savory pancake dish popular in Japan, particularly in the Kansai and Hiroshima regions. The name translates to "grilled as you like it", reflecting the dish's customizable nature. Typically, it is made with a batter of flour, grated yam, water or dashi, eggs, and shredded cabbage, with additional ingredients such as green onion, meat, squid, shrimp, vegetables, cheese, or mochi. The pancake is usually topped with a variety of condiments like okonomiyaki sauce, mayonnaise, dried seaweed, and dried fish flakes.

Recipe

Ingredients:

  • 1 cup Okonomiyaki flour

  • 3/4 cup water

  • 2 eggs

  • 4 cups finely shredded cabbage

  • 6 green onions, thinly sliced

  • 1/2 cup Tenkasu (tempura scraps)

  • 8 slices of pork belly

  • Okonomi sauce

  • Mayonnaise

  • Aonori (dried green seaweed)

  • Katsuobushi (dried bonito flakes)


Instructions:

  1. In a large bowl, mix Okonomiyaki flour and water until smooth.

  2. Add eggs to the mixture and stir well.

  3. Add shredded cabbage, green onions, and Tenkasu to the batter and mix well.

  4. Heat a non-stick frying pan over medium heat.

  5. Pour half of the batter into the pan and shape it into a round pancake.

  6. Lay 4 slices of pork belly on top of the pancake.

  7. After about 3 minutes, flip the pancake using two spatulas.

  8. Cook for another 5 minutes, then flip the pancake again.

  9. Cook for 3 more minutes or until the pork belly is fully cooked.

  10. Transfer the pancake to a plate and drizzle with Okonomi sauce and mayonnaise.

  11. Sprinkle with Aonori and Katsuobushi before serving.

  12. Repeat the process with the remaining batter and ingredients.
