Nyama is a traditional Kenyan dish typically made from beef or goat meat. The name 'Nyama' literally translates to 'meat' in Swahili. Recipe
Ingredients:
2 lbs beef, cut into chunks
2 onions, chopped
4 cloves garlic, minced
2 tomatoes, chopped
1 tablespoon curry powder
1 teaspoon cayenne pepper
Salt to taste
Black pepper to taste
2 tablespoons vegetable oil
2 cups beef broth
2 green bell peppers, chopped
2 red bell peppers, chopped
Instructions:
Heat the vegetable oil in a large pot over medium heat.
Add the beef to the pot and cook until it is browned on all sides.
Remove the beef from the pot and set it aside.
Add the onions and garlic to the pot and cook until they are soft and translucent.
Add the tomatoes, curry powder, cayenne pepper, salt, and black pepper to the pot and stir to combine.
Return the beef to the pot and add the beef broth.
Bring the mixture to a boil, then reduce the heat and let it simmer for about an hour, or until the beef is tender.
Add the green and red bell peppers to the pot and cook for another 10-15 minutes, or until the peppers are soft.
Taste and adjust the seasoning if necessary.
Serve the Nyama hot with rice or bread.
