Nasi Lemak is a traditional Malay dish commonly found in Malaysia, Brunei, Singapore, and parts of Indonesia. It is considered the national dish of Malaysia. The dish consists of rice cooked in coconut milk and pandan leaf, served with an array of side dishes that typically include cucumber slices, small fried anchovies, roasted peanuts, hard-boiled or fried egg, and hot spicy sauce (sambal). Variations of Nasi Lemak can also include other accompaniments like chicken, cuttlefish, beef, or pickled vegetables.
Recipe
Ingredients:
2 cups Jasmine rice
2 cups coconut milk
1 cup water
2 pandan leaves
1 lemongrass
1 teaspoon salt
4 hard-boiled eggs
1 cucumber
1 bunch of small fried anchovies
1/2 cup roasted peanuts
1 cup sambal (spicy chili paste)
Instructions:
Rinse the jasmine rice under cold water until the water runs clear.
Combine the rice, coconut milk, water, pandan leaves, lemongrass, and salt in a pot.
Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is fully absorbed.
While the rice is cooking, prepare the accompaniments: peel the hard-boiled eggs, slice the cucumber, fry the anchovies, and roast the peanuts.
Once the rice is done, fluff it with a fork and remove the pandan leaves and lemongrass.
Serve the rice with the eggs, cucumber slices, fried anchovies, roasted peanuts, and sambal on the side.
