Muufo is a traditional Somali dish, typically made from corn or sorghum flour mixed with water and yeast. The dough is then shaped into a round form and baked, resulting in a thick, pancake-like bread. It is often served with a variety of accompaniments, such as stew, soup, or honey. The dish is particularly popular in the northern regions of Somalia.
Recipe
Ingredients:
2 cups of white cornmeal
1 cup of all-purpose flour
1 teaspoon of salt
2 tablespoons of sugar
1 tablespoon of yeast
1 tablespoon of olive oil
1-1.5 cups of warm water
1 tablespoon of butter (for greasing the pan)
Instructions:
In a large bowl, combine the cornmeal, flour, salt, sugar, and yeast.
Add the olive oil and warm water to the dry ingredients. Start with 1 cup of water and add more as needed to create a smooth, thick batter.
Cover the bowl with a clean cloth and let it sit in a warm place for about 2 hours to allow the yeast to activate and the batter to rise.
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and grease a baking pan with butter.
Pour the batter into the greased pan, spreading it out evenly with a spoon or spatula.
Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and a toothpick inserted into the middle comes out clean.
Remove the muufo from the oven and let it cool in the pan for a few minutes before serving. Enjoy it warm with a side of soup or stew.
