Mutabbaq is a popular stuffed pancake or bread-like dish found in the cuisines of the Arabian Peninsula, India, Indonesia, Malaysia, Singapore, Brunei and Thailand. Its name derives from the Arabic word 'mutabbag', meaning 'folded'. The stuffing usually consists of minced meat, onions, and spices, although there are many variations including vegetarian versions. The dish is typically pan-fried and served as a snack or appetizer.
Recipe
Ingredients:
500 grams of minced meat
2 large onions
4 cloves of garlic
1 bunch of parsley
2 green chilies
2 tablespoons of vegetable oil
Salt to taste
1 teaspoon of black pepper
1 teaspoon of turmeric
1 teaspoon of cumin
1 teaspoon of coriander
500 grams of all-purpose flour
1 teaspoon of sugar
1 teaspoon of salt
1 cup of water
2 eggs
1/2 cup of milk
Instructions:
Start by preparing the filling. Chop the onions, garlic, parsley, and green chilies.
Heat the vegetable oil in a pan and sauté the onions and garlic until they become soft.
Add the minced meat to the pan and cook until it turns brown.
Add the chopped parsley and green chilies to the pan. Season with salt, black pepper, turmeric, cumin, and coriander. Mix well and cook for a few more minutes. Set aside to cool.
In a large bowl, mix the flour, sugar, and salt. Gradually add water and knead until a soft dough is formed. Let it rest for about 30 minutes.
Divide the dough into small balls. Roll out each ball into a thin circle.
Place a portion of the meat filling in the center of each circle. Fold the edges of the dough over the filling, sealing it well.
Heat a pan and cook each Mutabbaq on medium heat until it turns golden brown on both sides.
In a bowl, beat the eggs with the milk. Pour this mixture over the Mutabbaq and cook for a few more minutes.
Serve the Mutabbaq hot with a side of your favorite sauce.
