Musakhan is a traditional Palestinian dish, often considered the national dish of Palestine. It consists of roasted chicken baked with onions, sumac, allspice, saffron, and fried pine nuts served over taboon bread. The dish is typically served family-style, with a large tray of food meant for communal eating. Musakhan is often made to celebrate the olive harvest, as the dish uses a generous amount of olive oil.
Recipe
Ingredients:
2 large onions, sliced
1/4 cup olive oil
1/4 cup sumac
1 whole chicken, cut into pieces
Salt and pepper to taste
4 large pieces of flatbread or naan
1/4 cup pine nuts, toasted
1/4 cup chopped fresh parsley
Instructions:
In a large skillet, sauté the onions in the olive oil until they are soft and translucent.
Add the sumac to the onions and stir well to combine.
Add the chicken pieces to the skillet and season with salt and pepper. Cook until the chicken is browned on all sides.
Preheat your oven to 375 degrees F (190 degrees C).
Place the flatbread on a baking sheet and top with the chicken and onion mixture. Sprinkle the toasted pine nuts over the top.
Bake in the preheated oven for 10-15 minutes, or until the bread is crispy and the chicken is cooked through.
Sprinkle the chopped parsley over the top before serving.
