The cooking process involves heating stones in a pit, placing the food on top, and then covering everything with banana leaves and soil to trap the heat. Recipe

Ingredients:

  • 1 lb pork, diced

  • 1 lb chicken, diced

  • 1 lb sweet potatoes, diced

  • 1 lb taro root, diced

  • 1 lb bananas, sliced

  • 1 lb yams, diced

  • 1 lb plantains, diced

  • 1 lb spinach, shredded

  • 1 lb cabbage, shredded

  • 4 cloves garlic, minced

  • 2 onions, sliced

  • Salt to taste

  • Pepper to taste

  • 4 banana leaves


Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Prepare a large baking dish by lining it with banana leaves.

  3. In a large bowl, combine the diced pork, chicken, sweet potatoes, taro root, bananas, yams, plantains, spinach, and cabbage.

  4. Add the minced garlic and sliced onions to the bowl. Season with salt and pepper, then mix well until all ingredients are evenly distributed.

  5. Transfer the mixture to the prepared baking dish, spreading it out evenly.

  6. Cover the dish with more banana leaves, tucking in the edges to seal in the ingredients.

  7. Bake in the preheated oven for about 2 hours, or until the meat is tender and the vegetables are cooked.

  8. Remove from the oven and let it cool for a few minutes before serving. Enjoy your Mumu.
