Muamba Chicken is a traditional dish from Angola, often considered the country's national dish. Recipe
Ingredients:
1 whole chicken, cut into pieces
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons palm oil
2 onions, chopped
2 tomatoes, chopped
1 hot pepper, chopped (optional)
1 cup pumpkin, chopped
1 cup okra
1 cup chicken stock
1 cup peanut butter
Instructions:
Season the chicken with garlic, salt, and pepper. Set it aside for a few minutes to marinate.
Heat the palm oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set it aside.
In the same pot, add the onions, tomatoes, and hot pepper. Cook until the onions are soft and translucent.
Add the pumpkin, okra, and chicken stock to the pot. Bring the mixture to a boil.
Lower the heat and add the chicken pieces back into the pot. Cover the pot and let it simmer for about 30 minutes.
Stir in the peanut butter and continue to simmer for another 10 minutes, until the chicken is cooked through and the sauce has thickened.
Serve the Muamba Chicken hot with rice or fufu.
