Mtsvadi is a traditional Georgian dish, often referred to as Georgian shashlik. The dish typically consists of skewered and grilled chunks of marinated pork, mutton, or beef. The meat is commonly marinated in a mixture of onion, vinegar, and spices, then grilled over a fire using vine cuttings or fruit tree branches. Mtsvadi is usually served with a variety of Georgian sauces such as tkemali or ajika.
Recipe
Ingredients:
2 pounds of pork shoulder
3 medium onions
Salt to taste
Black pepper to taste
1 bunch of fresh cilantro
1 bunch of fresh dill
Pomegranate juice or dry red wine for marinade
Instructions:
Cut the pork shoulder into 1-inch cubes and place them in a large bowl.
Cut the onions into rings and add them to the bowl with the meat.
Season the meat and onions with salt and black pepper.
Chop the fresh cilantro and dill and add them to the bowl.
Pour pomegranate juice or dry red wine over the meat until it is completely covered. Mix everything together.
Cover the bowl with plastic wrap and refrigerate for at least 6 hours, or overnight for best results.
Preheat your grill to medium-high heat.
Thread the marinated meat and onions onto skewers.
Grill the skewers for about 10-15 minutes, turning occasionally, until the meat is cooked to your desired level of doneness.
Serve the Mtsvadi hot, right off the grill.
