Next Dish: Anticucho
Moules-frites is a popular main dish originating from Belgium, also considered a national dish of the country. It consists of mussels cooked or steamed with onions and celery served with fries. The broth may be flavored with white wine, beer, or herbs. Despite its Belgian roots, Moules-frites is also widely served in the north of France and is a common sight in brasseries throughout the United Kingdom.
Recipe
Ingredients:
2 kg mussels
2 large onions
4 cloves of garlic
A bunch of parsley
1 glass of white wine
3 tablespoons of butter
Salt and pepper to taste
4 large potatoes
Vegetable oil for frying
Instructions:
Clean the mussels by scrubbing them under cold water and removing the beards. Discard any that are open and do not close when tapped.
Peel and finely chop the onions and garlic. Rinse and chop the parsley.
In a large pot, melt the butter over medium heat. Add the onions and garlic, and cook until they are soft.
Add the mussels to the pot, then add the white wine. Cover and cook for about 10 minutes, or until the mussels have opened. Discard any mussels that have not opened.
Season with salt and pepper, and sprinkle with chopped parsley.
While the mussels are cooking, peel the potatoes and cut them into fries. Rinse them under cold water and pat dry with a kitchen towel.
Heat the vegetable oil in a deep fryer or large pot to 180°C. Add the fries in batches and cook until golden and crispy. Use a slotted spoon to remove them from the oil, and drain on kitchen paper.
Season the fries with salt. Serve the mussels hot with the fries on the side.
