Next Dish: Piri Piri Chicken
Molokhia is a traditional Middle Eastern dish made primarily from the leaves of Corchorus olitorius, also known as Nalta jute, tossed with garlic and coriander. The dish can be served as a soup or stew, often accompanied by chicken, rabbit, or beef. Its consistency varies from a broth-like soup to a thicker, more stew-like dish depending on the region. It is a staple food in many Middle Eastern, North African, and East African countries.
Recipe
Ingredients:
2 packs of frozen or fresh Molokhia leaves
6 cloves of garlic
2 tablespoons of coriander
1 tablespoon of butter
1 liter of chicken broth
Salt to taste
1 teaspoon of black pepper
Juice of 1 lemon
1 whole chicken
2 onions
2 bay leaves
4 cardamom pods
Instructions:
Start by preparing the chicken broth. Add the chicken to a large pot, cover with water, add the onions, bay leaves, and cardamom pods. Bring to a boil, then reduce the heat and let it simmer for about 1 hour. Once done, strain the broth and keep it aside.
In a separate pot, add the butter and let it melt. Add the garlic and sauté until it turns golden brown.
Add the coriander to the pot and stir for a minute.
Add the Molokhia leaves to the pot and stir until they are well combined with the garlic and coriander.
Add the chicken broth to the pot, season with salt and black pepper, and stir well.
Let the Molokhia simmer on low heat for about 20 minutes.
Add the lemon juice and stir well.
Serve the Molokhia hot with rice or bread.
