Moi Moi is a traditional Nigerian steamed bean pudding made from a mixture of washed and peeled black-eyed peas, onions, and fresh ground peppers. It is a protein-rich food that is a staple in Nigeria and is often served at parties and social gatherings. The dish can be customized with additions like corned beef, boiled eggs, or fish. Its texture is similar to custard, and it is often served alongside jollof rice or fried rice.

Recipe

Ingredients:

  • 2 cups of peeled beans

  • 1 red bell pepper

  • 2 scotch bonnet peppers

  • 1 large onion

  • 2 boiled eggs

  • 1 cooked mackerel fish

  • 1 cup of vegetable oil

  • 2 cups of chicken or beef broth

  • 2 tablespoons of crayfish

  • 2 bouillon cubes

  • Salt to taste


Instructions:

  1. Soak the beans in water for about 30 minutes, then blend along with the red bell pepper, scotch bonnet peppers, and half of the onion until smooth.

  2. Pour the blended mixture into a large bowl, add the vegetable oil, broth, crayfish, bouillon cubes, and salt. Stir thoroughly until all the ingredients are well combined.

  3. Dice the remaining half onion, boiled eggs, and mackerel fish. Add them to the bean mixture and stir.

  4. Pour the mixture into moi moi leaves or ramekins if you don't have the leaves. Make sure to leave some space as the mixture will rise during cooking.

  5. Place the ramekins or moi moi leaves in a steamer or pot of boiling water. Cover and let them cook for about 45 minutes to 1 hour. Check regularly and add more water if necessary.

  6. To check if the moi moi is done, dip a knife into one of them. If the knife comes out clean, then it's done. If not, cook for a few more minutes.

  7. Once done, remove from the steamer or pot and let it cool down a bit before serving.
