Mine Frite is a popular dish in Mauritius, known as Mauritian Fried Noodles. It is typically made with egg noodles that are stir-fried with a variety of ingredients including garlic, soy sauce, and a mix of vegetables and proteins such as chicken, shrimp, or tofu. Recipe

Ingredients:

  • 500g of potatoes

  • 1 onion

  • 2 cloves of garlic

  • 2 eggs

  • 100g of cooked ham or chicken

  • 100g of shrimps

  • 2 tablespoons of soy sauce

  • 2 tablespoons of oyster sauce

  • 2 spring onions

  • Salt and pepper to taste

  • Vegetable oil for frying


Instructions:

  1. Peel the potatoes and cut them into thin sticks. Rinse them under cold water then dry them thoroughly with a clean cloth.

  2. Heat the oil in a pan and fry the potatoes until they are golden and crispy. Remove them from the pan and set them aside.

  3. In the same pan, add a bit more oil if needed, then add the chopped onion and garlic. Fry until they are fragrant and slightly golden.

  4. Add the ham or chicken and the shrimps to the pan and stir fry for a few minutes until they are cooked.

  5. In a separate bowl, beat the eggs then pour them over the meat and shrimps in the pan. Stir quickly to scramble the eggs.

  6. Add the fried potatoes back into the pan and mix well.

  7. Add the soy sauce, oyster sauce, salt, and pepper. Mix well to combine all the ingredients.

  8. Finally, add the chopped spring onions and give everything a final stir.

  9. Serve hot.
