Meshana Skara is a traditional Bulgarian dish that is essentially a mixed grill of various meats. It typically includes pork, chicken, and lamb, along with sausages and kebabs. The meats are marinated in a mixture of spices before being grilled, often served with a side of chips and a variety of dips. It is a popular choice in Bulgarian restaurants, especially during summer months.

Recipe

Ingredients:

  • 500g pork belly

  • 500g pork neck

  • 500g chicken thighs

  • 500g veal

  • 500g lamb

  • Salt to taste

  • Pepper to taste

  • 1 cup of vegetable oil

  • 1 cup of beer

  • 5 cloves of garlic

  • 1 bunch of fresh thyme

  • 1 bunch of fresh rosemary


Instructions:

  1. Cut all the meat into large pieces.

  2. Season the meat with salt and pepper to taste.

  3. In a large bowl, mix the vegetable oil, beer, minced garlic, thyme, and rosemary.

  4. Add the meat to the bowl and mix well to ensure all pieces are covered with the marinade.

  5. Cover the bowl and let the meat marinate in the refrigerator for at least 2 hours, or overnight if possible.

  6. Preheat your grill to medium-high heat.

  7. Grill the meat on each side until it's well cooked and has a nice char, about 10-15 minutes per side depending on the thickness of the meat.

  8. Serve the Meshana Skara with a side of your choice, like roasted vegetables or a fresh salad.
