Mechouia Salad is a traditional Tunisian dish primarily composed of grilled vegetables such as tomatoes, bell peppers, onions, and garlic. These ingredients are finely chopped or mashed together, often with the addition of olives, hard-boiled eggs, tuna, or capers. The salad is typically seasoned with coriander, caraway, and olive oil. It is commonly served as a starter or side dish, and is especially popular in the summer months.

Recipe

Ingredients:

  • 4 large bell peppers (mixture of red, yellow, and green)

  • 4 large tomatoes

  • 4 garlic cloves

  • 2 hot chili peppers

  • 2 tablespoons olive oil

  • 1 tablespoon vinegar

  • Salt and pepper to taste

  • 2 tablespoons capers

  • 20 black olives

  • 2 hard-boiled eggs

  • 1 can of tuna

  • 2 tablespoons chopped fresh parsley


Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Place the bell peppers, tomatoes, garlic cloves, and hot chili peppers on a baking sheet and roast them in the oven for about 30 minutes until they are charred.

  3. Remove the vegetables from the oven and let them cool. Once they are cool, peel the skin off the peppers and tomatoes, and remove the seeds.

  4. Chop the roasted vegetables and garlic into small pieces and place them in a large bowl.

  5. Add the olive oil, vinegar, salt, and pepper to the bowl and mix well.

  6. Drain the can of tuna and add it to the salad. Mix well.

  7. Decorate the salad with capers, black olives, and sliced hard-boiled eggs.

  8. Sprinkle the chopped fresh parsley on top of the salad before serving.
