Mattak is a traditional Inuit dish typically made from the skin and blubber of a whale, most commonly a bowhead or beluga. It is sometimes referred to as "muktuk" and can be eaten raw, frozen, or pickled. The dish is rich in vitamins and provides a source of energy in the harsh Arctic environment. It is considered a delicacy in Greenland and parts of Canada and Alaska.
Recipe
Ingredients:
1 pound of fresh whale skin and blubber (mattak)
Sea salt to taste
1 tablespoon of vegetable oil
Instructions:
Rinse the whale skin and blubber under cold water. Pat dry with paper towels.
Slice the mattak into thin, bite-sized pieces.
Sprinkle sea salt over the pieces, according to your taste.
Heat a tablespoon of vegetable oil in a large frying pan over medium heat.
Place the pieces of mattak in the pan and cook until they turn golden brown. This should take about 2-3 minutes on each side.
Once done, remove the pieces from the pan and drain on paper towels to remove excess oil.
Serve the mattak while hot. It can be eaten alone or with a dipping sauce of your choice.
