Mangu is a traditional dish originating from the Dominican Republic, primarily made of mashed plantains. The plantains are boiled and mashed, then typically served with red onions that have been sautéed in vinegar. This dish is often served for breakfast, but can also be enjoyed at any time of the day. The name "Mangu" is believed to derive from the English phrase "man good".

Recipe

Ingredients:

  • 4 green plantains

  • 4 cups of water

  • 2 teaspoons of salt

  • 4 tablespoons of butter

  • 1 red onion

  • 2 tablespoons of vinegar

  • 2 tablespoons of olive oil


Instructions:

  1. Peel the plantains and cut them into 2-inch pieces.

  2. In a large pot, bring the water to a boil. Add the plantains and salt.

  3. Cook the plantains for about 20 minutes, or until they are soft.

  4. While the plantains are cooking, thinly slice the red onion.

  5. In a frying pan, heat the olive oil over medium heat. Add the onions and cook until they are caramelized. Add the vinegar and cook for another 2 minutes.

  6. Once the plantains are cooked, drain the water and add the butter to the pot.

  7. Mash the plantains until they are smooth and creamy. If the mixture is too thick, you can add a little bit of the cooking water.

  8. Serve the mangu topped with the caramelized onions.
