Malawah is a traditional dish from Yemen, often served as a breakfast item. It is a type of pancake that is crispy on the outside and soft on the inside. The dough is made from flour, water, yeast, and sometimes sugar, and is typically fried in ghee or oil. Malawah is commonly served with honey, cheese, or a variety of savory accompaniments.

Recipe

Ingredients:

  • 2 cups of all-purpose flour

  • 1 tbsp of sugar

  • 1/2 tsp of salt

  • 1 cup of water

  • 1/2 cup of melted butter or ghee


Instructions:

  1. In a large bowl, combine the flour, sugar, and salt.

  2. Gradually add water to the dry ingredients and knead until a smooth dough is formed. If the dough is too sticky, add a little more flour.

  3. Divide the dough into small balls, about the size of a golf ball.

  4. Roll out each ball into a thin circle using a rolling pin. The thinner the better, but be careful not to tear the dough.

  5. Brush each circle with melted butter or ghee, then fold it in half, then in half again to form a triangle.

  6. Heat a frying pan over medium heat. Once hot, cook each triangle for about 2 minutes on each side or until golden brown.
