Maafe, also known as groundnut stew, is a traditional West African dish. It is a rich stew made primarily from meat, tomatoes, and groundnuts (peanuts), often served over rice or couscous. The dish varies widely across different countries and ethnic groups, with variations including different types of meat, fish, or vegetables. Despite these differences, the main ingredients of peanuts and tomatoes are consistent in most versions of the dish.

Recipe

Ingredients:

  • 2 lbs beef or lamb, cut into chunks

  • 2 large onions, chopped

  • 4 cloves of garlic, minced

  • 1 cup of peanut butter

  • 1 can of tomato paste

  • 4 large tomatoes, chopped

  • 2 cups of vegetable broth

  • 1 cup of water

  • 2 large carrots, chopped

  • 2 large potatoes, chopped

  • 1 small cabbage, chopped

  • 1 cup of okra

  • 1 hot pepper, chopped

  • Salt to taste

  • Black pepper to taste

  • 2 tablespoons of oil

  • Fresh parsley for garnish


Instructions:

  1. Heat the oil in a large pot over medium heat. Add the meat and brown on all sides. Remove the meat from the pot and set aside.

  2. In the same pot, add the onions and garlic. Cook until the onions become translucent.

  3. Add the tomato paste and peanut butter to the pot. Stir until well combined.

  4. Add the chopped tomatoes, vegetable broth, and water to the pot. Stir until the mixture is smooth.

  5. Return the meat to the pot. Add the carrots, potatoes, cabbage, okra, and hot pepper. Season with salt and pepper.

  6. Cover the pot and simmer for about 2 hours, or until the meat is tender and the vegetables are cooked.

  7. Adjust the seasoning if necessary. Garnish with fresh parsley before serving.
