Lobio is a traditional Georgian dish primarily made from red kidney beans. The beans are cooked and then crushed or pureed, mixed with garlic, onions, walnuts, coriander, and marigold petals, and then seasoned with various spices. The dish may also include meat or other vegetables. Lobio is typically served with Georgian bread and pickles.

Recipe

Ingredients:

  • 2 cups of red kidney beans

  • 1 large onion

  • 4 cloves of garlic

  • 1 bunch of fresh cilantro

  • 1 bunch of fresh parsley

  • 1 teaspoon of coriander powder

  • 1 teaspoon of blue fenugreek

  • 1 teaspoon of dried marigold

  • 1/2 teaspoon of chili powder

  • Salt to taste

  • 2 tablespoons of oil

  • 1 cup of walnuts


Instructions:

  1. Soak the red kidney beans overnight. Rinse them well and place them in a large pot.

  2. Cover the beans with water and bring them to a boil. Reduce the heat and let them simmer until the beans are tender.

  3. While the beans are cooking, chop the onion, garlic, cilantro, and parsley finely.

  4. Heat the oil in a frying pan and sauté the onion until it turns golden brown.

  5. Add the garlic, coriander powder, blue fenugreek, dried marigold, and chili powder to the pan. Stir well and cook for another minute.

  6. Once the beans are cooked, drain them but keep the water. Mash the beans slightly in the pot.

  7. Add the sautéed onion and spices to the pot with the beans. Mix well.

  8. Grind the walnuts in a food processor until they become a paste. Add this paste to the pot.

  9. Add the chopped cilantro and parsley to the pot. Stir everything together.

  10. If the mixture is too thick, add a bit of the reserved bean water. Season with salt to taste.

  11. Let the lobio simmer for another 10 minutes so that all the flavors can blend together. Serve warm.
