Laverbread is a traditional Welsh dish made from laver, an edible seaweed. It is often combined with oatmeal and fried into small patties. Despite its name, it is not a bread but gets its name from the Welsh word "bara", meaning bread. The dish is a staple in Welsh cuisine and is commonly served with breakfast, often alongside cockles.
Recipe
Ingredients:
500g Laver Seaweed
2 tablespoons of oatmeal
Salt to taste
Pepper to taste
Bacon fat or butter for frying
Instructions:
Rinse the laver seaweed thoroughly under cold water.
Place the rinsed seaweed in a large pot and add enough water to cover it.
Bring the water to a boil, then reduce the heat and let it simmer for about 6 hours until it becomes a thick, dark green paste.
Strain the laver paste through a sieve to remove any excess water, then mix in the oatmeal, salt, and pepper.
Heat the bacon fat or butter in a frying pan over medium heat.
Form the laverbread mixture into small patties and fry them in the hot fat or butter for about 3 minutes on each side, until they are crispy and golden brown.
Remove the laverbread from the pan and drain on paper towels before serving.
