ladob
Next Dish: Muufo
Ladob is a traditional dish from the Seychelles, an archipelago in the Indian Ocean. It can be served either as a savory dish or a dessert. The savory version typically includes boiled sweet potato and ripe plantain, and is often flavored with coconut milk, salt, and spices. The dessert version is similar, but with the addition of sugar and nutmeg for a sweet flavor.
Recipe
Ingredients:
2 ripe plantains
1 cup of coconut milk
1/2 cup of sugar
1/2 teaspoon of vanilla extract
1/2 teaspoon of grated nutmeg
1/2 teaspoon of cinnamon
1/2 teaspoon of salt
Instructions:
Peel the plantains and cut them into round slices.
In a pot, combine the plantain slices, coconut milk, sugar, vanilla extract, grated nutmeg, cinnamon, and salt.
Bring the mixture to a boil over medium heat.
Reduce the heat to low and let it simmer for about 20 minutes, or until the plantains are soft and the liquid has thickened.
Serve the Ladob warm or let it cool and refrigerate for later. It can be served as a dessert or a side dish.
