La Bandera, which translates to "The Flag", is a traditional dish from the Dominican Republic. It consists of white rice, red kidney beans, and meat, often chicken, beef, or pork. The dish is named after the colors of the Dominican flag, with the rice, beans, and meat representing the white, red, and blue respectively. La Bandera is typically served with a side of salad and fried plantains.

Recipe

Ingredients:

  • 2 cups of rice

  • 1 pound of meat (chicken, pork or beef)

  • 1 cup of red kidney beans

  • 1 ripe plantain

  • 1 cup of salad (lettuce, tomatoes, cucumbers)

  • 1 small onion

  • 2 cloves of garlic

  • 1 bell pepper

  • 1 cup of tomato sauce

  • 1 teaspoon of oregano

  • 1 teaspoon of cumin

  • Salt and pepper to taste

  • 2 tablespoons of olive oil

  • 2 cups of chicken broth


Instructions:

  1. Cook the rice according to the package instructions and set it aside.

  2. In a large saucepan, heat the olive oil over medium heat. Add the meat and cook until browned on all sides.

  3. Add the onion, garlic, and bell pepper to the saucepan and cook until the vegetables are softened.

  4. Add the tomato sauce, oregano, cumin, salt, and pepper to the saucepan and stir to combine.

  5. Add the red kidney beans and chicken broth to the saucepan. Bring the mixture to a boil, then reduce the heat and let it simmer until the beans are tender and the flavors are well combined.

  6. While the beans are cooking, peel and slice the ripe plantain. Fry the slices in a separate pan until they are golden brown on both sides.

  7. Prepare the salad by chopping the lettuce, tomatoes, and cucumbers and combining them in a large bowl.

  8. Serve the cooked rice, meat and bean mixture, fried plantains, and salad together on a plate. Enjoy your La Bandera meal.
