Kranjska Klobasa, also known as Carniolan sausage, is a traditional Slovenian sausage. Made primarily from pork, it also includes bacon, garlic, and pepper. It is recognized as a protected geographical indication (PGI) by the European Union, meaning it must be produced in Slovenia to bear the name. The sausage is typically smoked and can be served with a variety of side dishes.
Recipe
Ingredients:
2 kg pork shoulder
200 g pork belly
50 g salt
10 g crushed garlic
5 g crushed pepper
5 g water
Hog casings
Instructions:
Cut the pork shoulder and pork belly into small pieces.
Mix the pork pieces with salt, crushed garlic, crushed pepper and water in a large bowl.
Let the mixture sit for about an hour to allow the flavors to meld.
Rinse the hog casings and keep them in warm water.
Stuff the pork mixture into the hog casings, twisting them every 12 cm to form individual sausages.
Simmer the sausages in water for about 20 minutes, then let them cool.
Grill the sausages over medium heat until they are browned and cooked through.
Serve the Kranjska Klobasa hot with your choice of side dishes.
