Kitfo is a traditional Ethiopian dish, typically made from raw minced or finely chopped beef, seasoned with mitmita (a chili powder-based spice blend) and niter kibbeh (a clarified butter infused with herbs and spices). The dish can also be served lightly cooked, known as "kitfo leb leb". It is often accompanied by injera (a sourdough flatbread) and ayibe (a cottage cheese). Kitfo is commonly consumed during special occasions and holidays.

Ingredients:
1 lb lean beef
2 tablespoons mitmita (Ethiopian chili powder)
1 teaspoon cardamom powder
1 tablespoon salt
1/2 cup niter kibbeh (Ethiopian spiced butter)
Injera bread for serving
Fresh cottage cheese for serving
Instructions:
Start by cleaning the beef and trimming any fat. Cut the beef into small chunks.
Using a meat grinder or food processor, grind the beef until it is finely minced. If you prefer, you can also chop it finely with a knife.
In a mixing bowl, combine the minced beef with mitmita, cardamom powder, and salt. Mix well to ensure the spices are evenly distributed.
Melt the niter kibbeh in a pan over low heat. Once melted, pour it over the spiced beef and mix well.
Traditionally, kitfo is served raw or slightly cooked. If you prefer it cooked, you can heat the mixture in a pan over low heat for a few minutes until it reaches your desired level of doneness.
Serve the kitfo with injera bread and fresh cottage cheese. Enjoy your meal!
