Kibbeling is a traditional Dutch dish, often served as a snack. It consists of chunks of battered white fish, typically cod, deep-fried and often served with a mayonnaise-based garlic sauce or tartare sauce. The dish is commonly found at fish stands or in fish and chip shops in the Netherlands. Its name is derived from 'kabeljauwwang', the Dutch word for cod cheek, which was originally the main ingredient.
Recipe
Ingredients:
500 grams of white fish fillets (cod, haddock, or pollock)
100 grams of flour
1 teaspoon of baking powder
1 egg
150 ml of beer
Salt to taste
Pepper to taste
Oil for deep frying
Tartar sauce for serving
Instructions:
Cut the fish fillets into bite-sized pieces.
In a bowl, mix together the flour, baking powder, salt, and pepper.
In a separate bowl, beat the egg and then add the beer to it.
Gradually add the flour mixture to the egg and beer mixture, stirring constantly until you have a smooth batter.
Heat the oil in a deep fryer or large, deep saucepan to 180°C (350°F).
Dip the fish pieces into the batter, making sure they are fully coated.
Carefully drop the battered fish pieces into the hot oil and fry for about 5 minutes, or until golden brown and crispy.
Remove the kibbeling from the oil with a slotted spoon and drain on kitchen paper.
Serve the kibbeling hot with tartar sauce.
