Khorovats is a traditional Armenian dish, primarily consisting of grilled meat. The meat used can be pork, lamb, chicken, or fish, and is typically marinated before being skewered and barbecued. Recipe
Ingredients:
2 pounds of pork shoulder or beef
1 large red bell pepper
1 large green bell pepper
2 medium onions
3 cloves of garlic
1/2 cup of red wine
1/2 cup of vegetable oil
Salt and pepper to taste
Fresh herbs (parsley, dill, cilantro) for garnish
Instructions:
Cut the meat into 2-inch cubes.
Cut the bell peppers and onions into large pieces that won't fall off the skewers.
In a large bowl, mix together the red wine, vegetable oil, minced garlic, salt, and pepper.
Add the meat, bell peppers, and onions to the bowl and mix until everything is well coated with the marinade.
Cover the bowl and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
Preheat your grill to medium-high heat.
Thread the meat, bell peppers, and onions onto skewers, alternating between each ingredient.
Grill the skewers for about 10-15 minutes, or until the meat is cooked to your desired level of doneness, turning them occasionally to cook evenly on all sides.
Garnish with fresh herbs before serving.
