Khinkali is a traditional Georgian dumpling, usually filled with meat, spices, and herbs. The dough is twisted at the top to form a handle, which is discarded after eating the rest of the dumpling. Other fillings may include cheese, potatoes, or mushrooms. The dish is typically served as an appetizer or main course, often accompanied by beer.
Recipe
Ingredients:
500g of ground beef
500g of ground pork
2 onions
1 bunch of fresh coriander
1 teaspoon of ground caraway
1 teaspoon of hot pepper
Salt to taste
1 liter of water
500g of flour
1 egg
Instructions:
In a large bowl, combine the ground beef, ground pork, finely chopped onions, chopped coriander, ground caraway, hot pepper, and salt. Mix until all the ingredients are well combined.
In another bowl, combine the flour, egg, and a pinch of salt. Gradually add water and knead until you get a smooth and elastic dough. Cover the dough with a towel and let it rest for 30 minutes.
Divide the dough into small balls. Roll out each ball into a thin circle.
Place a spoonful of the meat filling in the center of each circle. Fold the edges of the dough towards the center, making sure to seal the filling inside. Twist the top to secure it.
Bring a large pot of salted water to a boil. Drop the khinkali in the boiling water and cook for about 10 minutes, or until they rise to the surface.
Using a slotted spoon, remove the khinkali from the water and drain.
Serve the khinkali hot, sprinkled with black pepper.
