Khao Poon is a popular Lao noodle soup dish, often referred to as the national dish of Laos. It is made from fermented rice vermicelli served in a spicy coconut milk-based broth, typically accompanied by various vegetables, herbs, and proteins like chicken, fish, or pork. The dish is a staple in Laotian cuisine and is commonly consumed during celebrations and festivals. It is also widely enjoyed in other Southeast Asian countries, particularly Thailand and Cambodia.

Recipe

Ingredients:

  • 1 package of rice vermicelli noodles

  • 2 cans of coconut milk

  • 1 stalk of lemongrass

  • 3 kaffir lime leaves

  • 1 tablespoon of red curry paste

  • 1/2 cup of chopped shallots

  • 3 cloves of garlic

  • 1 pound of chicken breast

  • 1 cup of shredded cabbage

  • 1 cup of bean sprouts

  • 1/2 cup of chopped cilantro

  • 1/2 cup of chopped green onions

  • 2 limes

  • 2 tablespoons of fish sauce

  • 1 tablespoon of sugar

  • Salt to taste


Instructions:

  1. Cook the rice vermicelli noodles according to the package instructions, then set aside.

  2. In a large pot, combine the coconut milk, lemongrass, kaffir lime leaves, and red curry paste. Stir until well mixed and bring to a simmer.

  3. Add the chopped shallots and garlic to the pot and cook until they become fragrant.

  4. Add the chicken breast to the pot and cook until it is fully cooked.

  5. Remove the chicken from the pot and shred it, then return it to the pot.

  6. Add the shredded cabbage, bean sprouts, cilantro, and green onions to the pot. Stir to combine.

  7. Add the juice of the two limes, the fish sauce, and sugar to the pot. Stir to combine and season with salt to taste.

  8. To serve, place a portion of the cooked noodles in a bowl, then ladle the soup over the top. Enjoy your Khao Poon!
