Khachapuri is a traditional Georgian dish of cheese-filled bread. The bread is leavened and allowed to rise, and is shaped in various ways, usually with cheese in the middle and a crust which is ripped off and used to dip in the cheese. The filling contains cheese (feta or sulguni), eggs and other ingredients. It is Georgia's national dish and is also popular in other post-Soviet states.
Recipe
Ingredients:
1 1/2 cups warm water
1 teaspoon sugar
2 1/4 teaspoons active dry yeast
4 1/2 cups all-purpose flour
1 1/2 teaspoons salt
3 tablespoons olive oil
1 1/2 cups shredded mozzarella cheese
1 1/2 cups crumbled feta cheese
1 1/2 cups shredded sharp cheddar cheese
4 eggs
4 tablespoons unsalted butter
Instructions:
In a large bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let it sit for 5 minutes until it is foamy.
Add the flour, salt, and 1 tablespoon of the oil to the yeast mixture. Stir until a dough forms.
Knead the dough on a lightly floured surface for about 5 minutes until it is smooth and elastic.
Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for 1 hour or until it has doubled in size.
Preheat your oven to 500 degrees F (260 degrees C) and place a pizza stone or inverted baking sheet in the oven to heat.
Divide the dough into 4 equal pieces and roll each piece into a circle about 9 inches in diameter.
Mix the cheeses together in a bowl. Place a quarter of the cheese mixture in the center of each dough circle.
Fold the edges of the dough over the cheese, leaving the center open, and pinch the corners to seal.
Transfer the khachapuri to the preheated pizza stone or baking sheet and bake for about 15 minutes until the crust is golden and the cheese is bubbly.
Crack an egg into the center of each khachapuri and return them to the oven for about 4 minutes until the egg is set to your liking.
Remove the khachapuri from the oven, place a tablespoon of butter on top of each one, and serve hot.
