Kapunata is a traditional Maltese dish, often considered as the Maltese version of the Sicilian Caponata. It is a vegetarian dish primarily composed of bell peppers, tomatoes, aubergines, garlic, and onions, all fried in olive oil. The dish is typically seasoned with herbs such as basil and capers, and occasionally includes olives. It is usually served as a side dish, but can also be served as a main meal when accompanied with bread or pasta.

Recipe

Ingredients:

  • 2 large aubergines

  • 3 bell peppers (red, yellow and green)

  • 2 medium onions

  • 4 cloves of garlic

  • 6 ripe tomatoes

  • 3 tablespoons of capers

  • 2 tablespoons of vinegar

  • 2 tablespoons of sugar

  • Salt and pepper to taste

  • 4 tablespoons of olive oil


Instructions:

  1. Wash the aubergines and peppers and cut them into cubes. Peel the onions and garlic and chop them finely. Wash the tomatoes and cut them into pieces.

  2. Heat the olive oil in a large pan and sauté the onions and garlic until they are translucent.

  3. Add the aubergines and peppers to the pan and sauté them until they are soft.

  4. Add the tomatoes, capers, vinegar, and sugar to the pan and stir well. Season with salt and pepper.

  5. Cover the pan and simmer for about 30 minutes, stirring occasionally. If the mixture becomes too dry, add a little water.

  6. Taste the kapunata and adjust the seasoning if necessary. Let it cool before serving.
