Kalduny is a traditional dish in Belarusian, Lithuanian and Polish cuisines, often described as a type of dumpling. The dish consists of a dough typically filled with meat, mushrooms, or potatoes. In some regions, sweet versions of Kalduny filled with berries or sweet cottage cheese are also popular. The dish is often served with sour cream, butter, or fried onions.
Recipe
Ingredients:
2 cups of flour
2 eggs
1/2 cup of water
Salt to taste
1 lb of ground beef
1 onion, finely chopped
2 cloves of garlic, minced
1 tbsp of vegetable oil
1/2 cup of sour cream
Fresh dill for garnish
Instructions:
In a large bowl, combine flour, eggs, water and a pinch of salt. Knead until a smooth dough forms. Cover with a clean towel and let rest for 30 minutes.
While the dough is resting, prepare the filling. In a large skillet, heat the oil over medium heat. Add the onion and garlic and sauté until softened.
Add the ground beef to the skillet and cook until browned. Season with salt and pepper to taste. Remove from heat and let cool.
Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles with a round cookie cutter or glass.
Place a spoonful of the meat filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal.
Bring a large pot of salted water to a boil. Add the dumplings and cook until they float to the top, about 5-7 minutes.
Serve the dumplings hot, topped with sour cream and garnished with fresh dill.
