Johnny Cakes, also known as journey cakes, shawnee cakes or johnnycakes, are a type of cornmeal flatbread that is popular in the United States, particularly in New England and the Midwest. The dish is made from cornmeal, salt, and boiling water or milk, and is often served with maple syrup, honey, or other sweet toppings. The cakes are usually fried on a griddle, but can also be baked. The name "johnny cake" is believed to be a corruption of "journey cake", referring to their portability and long shelf-life.
