Next Dish: Tam Mak Hoong

Japchae is a traditional Korean dish made from sweet potato starch noodles known as dangmyeon, stir-fried in sesame oil with various vegetables, meat, and a soy sauce-based seasoning. The dish is typically garnished with sesame seeds and slivers of chili. It is often served at Korean parties and special occasions, and can be served hot or cold. The name "Japchae" literally means "mixed vegetables" in Korean.

Recipe

Ingredients:

  • 150 g Korean glass noodles (dangmyeon)

  • 100 g beef (sirloin or rib eye fillet)

  • 1 medium carrot

  • 1 medium onion

  • 2 stalks of green onions

  • 5 dried shiitake mushrooms

  • 1 small bunch of spinach

  • 2 cloves garlic

  • 2 eggs

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 1 tablespoon sugar

  • Salt and pepper to taste

  • Sesame seeds for garnish


Instructions:

  1. Soak the glass noodles and shiitake mushrooms in warm water for 20 minutes. Then cut the noodles using scissors into 6-7 inch lengths.

  2. Marinate the beef with 1 tablespoon of soy sauce, 1/2 tablespoon of sugar, and a pinch of pepper.

  3. Beat the eggs in a bowl with a pinch of salt. Cook them in a non-stick pan and cut them into thin strips.

  4. Sauté each vegetable separately in a pan with a little oil and a pinch of salt. Set them aside.

  5. Sauté the marinated beef and shiitake mushrooms.

  6. Boil the glass noodles for about 7 minutes until they are soft. Drain them and mix them with 1 tablespoon of soy sauce and 1 tablespoon of sesame oil.

  7. Combine all the ingredients in the pan and stir-fry for about 2-3 minutes.

  8. Add the garlic, sugar, and a little bit of salt and pepper to taste.

  9. Garnish with sesame seeds and serve.
