Recipe
Ingredients:
1 kg of lamb shoulder, cut into chunks
2 onions, chopped
4 carrots, sliced
4 potatoes, peeled and cut into chunks
3 leeks, sliced
2 celery stalks, sliced
1 small swede, peeled and cut into chunks
1.5 liters of chicken or vegetable stock
2 bay leaves
A few sprigs of fresh thyme
Salt and pepper to taste
Chopped fresh parsley to garnish
Instructions:
Season the lamb chunks with salt and pepper.
Heat a large pan and brown the lamb chunks on all sides. Remove the lamb and set aside.
In the same pan, add the onions, carrots, leeks, celery, and swede. Cook for a few minutes until the vegetables start to soften.
Return the lamb to the pan and add the stock, bay leaves, and thyme.
Bring the stew to a boil, then reduce the heat and let it simmer for about 2 hours, or until the lamb is tender.
Add the potatoes to the pan and continue to simmer for another 30 minutes, or until the potatoes are cooked.
Check the seasoning and adjust if necessary.
Serve the stew hot, garnished with fresh parsley.
