Indio Viejo, meaning "Old Indian", is a traditional Nicaraguan dish. It is a thick stew made from shredded meat, typically beef or chicken, onions, tomatoes, bell peppers, and a dough made from cornmeal. The dish is flavored with garlic, achiote, and sour orange juice, and is usually served with tortillas. The name is said to originate from a Nicaraguan legend involving an old Indian man.

Recipe

Ingredients:

  • 1 lb of beef

  • 2 onions

  • 2 bell peppers

  • 4 cloves of garlic

  • 2 tomatoes

  • 1 cup of orange juice

  • 1/2 cup of mint leaves

  • 1/2 cup of coriander leaves

  • 2 cups of corn masa (dough)

  • 4 cups of beef broth

  • Salt to taste

  • Pepper to taste

  • 2 tablespoons of achiote paste

  • 2 tablespoons of vegetable oil


Instructions:

  1. Start by cutting the beef into small pieces and season with salt and pepper.

  2. Heat the oil in a large pot and add the beef. Cook until it is browned on all sides.

  3. Chop the onions, bell peppers, garlic and tomatoes. Add them to the pot and cook until they are soft.

  4. Dissolve the achiote paste in the orange juice and add it to the pot.

  5. Add the beef broth and bring to a boil.

  6. Gradually add the corn masa, stirring constantly to avoid lumps.

  7. Lower the heat and let it simmer for about 30 minutes, stirring occasionally.

  8. Chop the mint and coriander leaves and add them to the pot.

  9. Cook for another 10 minutes, stirring occasionally.

  10. Adjust the seasoning if necessary and serve hot.
