Ingredients:
2 cups of chopped spinach or pumpkin leaves
1 cup of groundnuts (peanuts)
1 medium onion
2 medium tomatoes
1 teaspoon of salt
1 teaspoon of vegetable oil
2 cups of water
Instructions:
Start by washing your spinach or pumpkin leaves thoroughly and set them aside.
Peel and grind your groundnuts until they turn into a paste.
Chop your onion and tomatoes into small pieces.
In a large saucepan, heat the vegetable oil over medium heat.
Add the chopped onions into the saucepan and fry them until they are golden brown.
Add the groundnut paste into the saucepan and stir it in well with the onions.
Add the chopped tomatoes into the saucepan and stir them in well with the rest of the ingredients.
Add the salt and water into the saucepan and stir everything together.
Lower the heat and let the mixture simmer for about 10 minutes.
Add the spinach or pumpkin leaves into the saucepan and stir them in well with the rest of the ingredients.
Cover the saucepan and let the mixture simmer for about 20 minutes or until the leaves are tender and the sauce has thickened.
Once it's done, remove the saucepan from the heat and let it cool for a few minutes before serving. Your Ifisashi is ready to be enjoyed.
