Idrijski Žlikrofi is a traditional Slovenian dish, specifically from the town of Idrija. It consists of small dumplings filled with potatoes, onions, lard, and various spices, typically served with a meat sauce. The dish has been granted Traditional Speciality Guaranteed status by the European Union, ensuring that authentic Idrijski Žlikrofi can only be produced in Idrija. The preparation process is complex and time-consuming, making it a special occasion dish in Slovenian culture.
Recipe
Ingredients:
1 kg of potatoes
300 g of flour
1 egg
1 onion
100 g of smoked bacon
1 clove of garlic
1 tablespoon of marjoram
1 tablespoon of chives
Salt and pepper to taste
100 g of butter for serving
Instructions:
Peel the potatoes and cook them in salted water until soft.
When the potatoes are cooked, drain them and let them cool.
When the potatoes have cooled, mash them until smooth.
Add the flour and egg to the mashed potatoes and knead until a smooth dough forms.
Let the dough rest for about 30 minutes.
In the meantime, finely chop the onion, bacon, and garlic.
Fry the onion, bacon, and garlic in a pan until the onion is translucent and the bacon is crispy.
Add the marjoram, chives, salt, and pepper to the pan and mix well.
Roll out the dough and cut out circles using a round cookie cutter or a glass.
Place a small amount of the bacon and onion mixture in the center of each dough circle.
Fold the dough over the filling and pinch the edges together to seal, creating a half-moon shape.
Cook the žlikrofi in boiling salted water for about 15 minutes, or until they float to the surface.
Drain the žlikrofi and serve them with melted butter.
