Ichlekli is a traditional Turkmen dish that is often served during special occasions. It is a type of dumpling filled with meat, usually lamb or beef, and onions, then steamed or boiled until cooked. The dumplings are typically served with a side of sour cream or yogurt. The name "Ichlekli" translates to "with meat" in English.

Recipe

Ingredients:

  • 2 cups of fine semolina

  • 1 cup of sugar

  • 1 cup of vegetable oil

  • 1 cup of water

  • 2 tsp of baking powder

  • 1/2 tsp of salt

  • 1 cup of date paste

  • 1 tsp of cinnamon

  • 1/2 tsp of ground cloves


Instructions:

  1. Preheat your oven to 180°C (350°F) and grease a baking dish.

  2. In a large bowl, mix together the semolina, sugar, baking powder, and salt.

  3. Add the vegetable oil to the semolina mixture and mix until well combined.

  4. Gradually add the water to the mixture, stirring constantly until a dough forms.

  5. Press half of the dough into the bottom of the prepared baking dish.

  6. In a separate bowl, mix the date paste with the cinnamon and ground cloves until well combined.

  7. Spread the date paste mixture over the dough in the baking dish.

  8. Crumble the remaining dough over the date paste layer.

  9. Bake in the preheated oven for about 30 minutes, or until the top is golden brown.

  10. Allow to cool before cutting into squares and serving.
