Holubtsi is a traditional Ukrainian dish commonly known in English as stuffed cabbage rolls. The dish consists of cabbage leaves that are filled with a mixture of grains, such as rice or barley, and minced meat, often pork or beef. It is typically simmered or baked in a tomato-based sauce and served hot. Variations of the dish can be found in many Eastern and Central European cuisines.

Recipe

Ingredients:

  • 1 head of cabbage

  • 2 cups of cooked rice

  • 1 finely chopped onion

  • 1 pound of ground beef

  • 1/2 pound of ground pork

  • 1 can of tomato soup

  • 1 can of diced tomatoes

  • 1 teaspoon of salt

  • 1/2 teaspoon of black pepper

  • 1/2 teaspoon of garlic powder

  • 2 beaten eggs

  • 1/2 cup of milk

  • 1/4 cup of melted butter


Instructions:

  1. Preheat your oven to 350 degrees F (175 degrees C).

  2. Cook the cabbage in boiling water just enough so that it's leaves can be pulled off easily. Set the leaves aside.

  3. In a large bowl, mix the beef, pork, rice, and onion. Season with salt, pepper, and garlic powder. Stir in the eggs, milk, and butter.

  4. Place about 1/2 cup of meat mixture in the center of each cabbage leaf. Roll the leaf around the filling, tuck in the sides, and secure with toothpicks.

  5. Arrange the cabbage rolls in a large baking dish or Dutch oven. Pour the tomato soup and diced tomatoes over the top of the rolls.

  6. Cover and bake for about 90 minutes in the preheated oven, or until the cabbage is tender and the meat is cooked through.
