Hernekeitto is a traditional Finnish dish, typically made of dried peas, water, and small pieces of pork. It is often served with mustard and accompanied by rye bread. The dish is traditionally eaten on Thursdays, a practice dating back to the pre-Reformation era. It is also commonly consumed during the Finnish holiday, Laskiainen.

Recipe

Ingredients:

  • 500g dried green peas

  • 1 large onion

  • 1 large carrot

  • 2 liters of water

  • 1 smoked ham hock

  • 2 bay leaves

  • Salt and pepper to taste


Instructions:

  1. Soak the dried peas in water overnight or for at least 12 hours.

  2. Rinse the soaked peas under cold water and drain.

  3. Place the peas in a large pot and add 2 liters of water, bay leaves, and the ham hock.

  4. Bring the mixture to a boil and then reduce the heat to low, letting it simmer for about 2 hours.

  5. While the soup is simmering, chop the onion and carrot into small pieces.

  6. After 2 hours, remove the ham hock from the pot and let it cool. Once cooled, remove the meat from the bone and chop it into small pieces.

  7. Add the chopped onion, carrot, and ham back into the pot.

  8. Continue to simmer the soup for another 30 minutes, or until the vegetables are soft.

  9. Season the soup with salt and pepper to taste, then serve hot.
